As the cheese ripens the colour deepens, the flavour becomes stronger and the cheese begins to run like thick Guernsey cream between its rind and its middle, and it is gorgeous. This cheese making farm has been around since the 1930s, in Somerset, and now go by ‘White Lake’ at Bagborough Farm, near Glastonbury, This is a lovely little brie made from a nearby herd of Guernsey cows. The taste is full and rich with subtle depths and flavours.
