The cheese is washed with a special brine every three days to achieve a slightly pungent moist rind which softens the cheese and gives it an extra depth of flavour, A superb West Country equivalent to Raclette, it cooks and melts brilliantly. You don’t need anything special to melt this cheese, you can melt/grill it in the oven on a tray/dish, or have it as it is as it’s still gorgeous uncooked. (Pasteurized and Animal Rennet)
