A lovely cheese tower! Around 4.8kg suitable for 40-50 hungry guests, or 80-100 guests if there are additional food options.
Shilling – 100g
Goat’s milk | Thermised (unpasteurised) | Soft
A little cheese with a lot going on. Shilling is a small, soft goat’s cheese with a dense, creamy centre and a beautifully delicate flavour. Expect a gentle sweetness followed by nutty notes of macadamia and almond, with a touch of mushroom and fresh lactic acidity.
As it matures it becomes firmer, richer and a little more savoury. Small but mighty – worth every Shilling.
Cremet – 170g
Goat’s milk & cow’s double cream | Pasteurised | Soft, mould-ripened
If you like your cheese ridiculously creamy, this one’s for you. Cremet combines fresh goat’s milk with cow’s double cream to create an incredibly soft, rich, almost mousse-like texture.
The flavour starts fresh, delicate and creamy, with just a gentle goatiness, before developing richer, earthier and more savoury notes as it ripens. Basically, cream of the crop.
Isle of Wight Blue – 200g
Cow’s milk | Pasteurised | Soft blue
A beautifully creamy blue that’s perfect for both committed blue-cheese lovers and those just dipping their toes into the blue side.
Young, it’s mild, buttery and creamy with a gentle blue tang. Give it time and those blue flavours become deeper, spicier and more savoury, while the centre stays wonderfully soft and yielding. Feeling blue has never tasted so good.
Mini Stilton – 300g
Cow’s milk | Pasteurised | Blue
A proper British classic in a perfectly giftable little truckle. Rich, creamy and beautifully blue-veined, Stilton balances buttery richness with salty, savoury flavours and that distinctive lingering blue tang.
Bold enough to make an impression without overpowering the cheeseboard. Add a glass of port and you’ve got a Stil-ton of reasons to stay for another slice.
Baron Bigod – 1kg
Montbéliarde cow’s milk | Pasteurised | Soft, bloomy rind
The British answer to Brie – although we’d argue it’s even better. Baron Bigod is gloriously rich and buttery, becoming beautifully soft and gooey beneath its bloomy rind as it ripens.
Expect flavours of warm milk, mushroom and earthiness, with a gently nutty rind and plenty of savoury depth. At peak ripeness, it’s the sort of cheese you’ll find yourself going back to again and again. Bigod by name, big on flavour.
Cornish Yarg – 3kg
Cow’s milk | Pasteurised | Semi-hard, nettle-wrapped
You can’t really mistake a Yarg. Wrapped by hand in nettle leaves, its wonderfully distinctive rind hides a cheese that’s much more delicate than its dramatic appearance suggests.
The centre is slightly open and crumbly, becoming softer and creamier as you move towards the rind. Expect gentle lactic, buttery and creamy flavours with subtle earthy and mushroomy notes from the nettle-covered rind. Then wait a few seconds for that lovely slightly creamy finish to arrive.
Nettle your average cheese.
We can supply orange slices and tea leaves but if this is for a wedding tower we recommend getting a florist to dress the cheese on the day for the ultimate look.
